real simple to make:
-peel as many potatoes as you want. 2 is sufficient per person
-shred potatoes
-fry potato shreds, light veggie oil as needed, until done
-eat, enjoy!

I like simple! — Do this all the time, often with potatoes that I pick up form under the mulch as I go by in the garden.
When I have more time, I include some walla walla onion and dehydrated and flaked turnip greens, bok choi greens, kale leaves, or beet greens, and some chopped chives.

oooooh, with onion is really good! I will have to try it with greens
