This is a quick tutorial for making seaweed and rice wraps, also known as vegetarina sushi. This is bare bones using just rice. It is very, very simple and easy to make. You will need for each wrap 3-4 heaping tablespoons cooked rice, warm, and one sheet of dried seaweed, also known as nori. You can use either brown or white rice. If your local grocery store does not carry seaweed go to a grocery store that carries Asian food if one is available to you. I found a couple of online stores you can purchase seaweed from:

To find more go to google and put ‘where to buy nori’ or something similar in the search box.
Let’s Begin. Start with warm, freshly cooked rice. The heat from the rice will soften the seaweed/nori and cause the rice to stick easier to the seaweed. Salt lightly to taste, or if you are reducing your salt intake leave out the salt or use another seasoning that you like with rice. If you are unfamiliar with Asian spices ask at the gocery you get the seaweed from for spices that go well with rice and seaweed. I have found many different mixes, just be sure any spice mix you choose contains no fish, shrimp, or other meat products. You can also try a cross-cultural mix; I like this using Adobo seasoning (without pepper) on the rice.
1. Lay your sheet on a plate or cutting board; some type of smooth, even surface.
2. Spoon 1 heaping tablespoon of rice on one end of the seaweed, spreading it evenly lengthwise.
3. Roll up the seaweed over the rice until no rice is showing.
4. Repeat until the seaweed is completely rolled up.
Finish rolling it up and Voila! You’ve got a nice seaweed and rice wrap. You can eat it like this or cut it into slices. Wait for it to cool to get slices with clean edges.
You can add almost anything to this if you want to try a wrap that’s not just plain rice. I like shredded carrots and/or cucumber sliced really thin. I also use avocado. When using other things with the rice I make this a little different. I spread all the rice completely over the entire sheet of seaweed, then spread a layer of avocado and/or cucumber slices over the rice, then roll it up. Then I cut the wrap into slices.
